O que você fará

My favorite Oaxacan market, Central Abastos, is a dizzying display of wholesale trade. It is easy to get lost in a sea of vendors, offering everything from fresh-ground chocolate and rare chiles to hand-woven baskets and regional ceramics. A familiar eye provides a sense of order to the place. As we navigate from street through marketplace, I will show you my favorite food stalls, introduce you to exotic fruits and vegetables, and guide you on a personalized shopping experience.

We will start in my kitchen or at a cafe with coffee, chocolate y pan artesenal, take a private car (or taxi) to the market for a guided food and shopping tour, and return to the city to share a mezcal. Throughout the experience, we will sample many things -- from the best empanada in the valley to pre-Hispanic beverages and more delicious goods that express the abundance of Oaxaca.

I am a James Beard nominated author who studies food cultures around the world. Over the past 4 years, I have worked alongside traditional cooks and producers to learn the foodways of Oaxaca. Here I run Cocina Nahual, a chef residency that promotes producers within the region, and Gordibuena Provisions, a product company that highlights the agricultural abundance of deep Mexico. This work will culminate in a second title that examines preservation methods around the world. I look forward to sharing the rich flavors and cultural pride of Oaxaca with you.

Onde você estará

Most of our time will be spent at Central Abastos, the wholesale market that lives on the edge of the historical center. We will begin the tour in my kitchen or at a cafe and end the tour in the city or on my private rooftop that overlooks the famous church. The city center is about a 7-10 minute drive to the market.

Rachael brings a unique perspective to a potentially overwhelming experience. Navigating the enormous market, her eye for detail–particularly for responsibly sourced, regional items–brings a vast array into sharp focus. Her relationships with vendors (and the accompanying stories) humanize what could otherwise be a detached, touristic experience. A wonderful way to spend a day in Oaxaca!

Rachael gives a very thoughtful and respectful look at Oaxacan culture, past and present, through food. She tells lots of interesting stories throughout the day which makes the tour intimate. My friend and I had purposely avoided going Abastos market on our own because of its size and not having an understanding of the language and culture so having Rachael guide us to all her favourite people and food was truly fabulous. If you appreciate food and culture on a deeper level and want to understand something about Oaxacan people and sample some amazing food, Rachael’s tour is a must.

Good tour of the Abastos market - we would not have gone there on our own so it was great to have someone navigate and help sample the best food especially on our first day in Oaxaca. For us, doing a tour with a local would have likely worked better as we wanted to connect more with the joy and fun-loving aspects of food and it seemed like the detail we got was more of an academic perspective. For anyone looking for that more in-depth knowledge this would be a good tour though.

We're food and travel writers and need to be able to hit the ground running. Doing that ourselves at Oaxaca's Abastos Market would have been impossible. Rachael's knowledge is expert, her enthusiasm infectious, and the places she shared in the market were clearly her favorites. Her multi-hour tour was clearly the best way for us to learn about the market and we had a blast to boot.
