If you want modern Australian and a bit more upmarket then Palette in Katoomba is great.

A very talented chef here and great service. I'm a big fan of their woodfired bread with smoked butter! They also do awesome cocktails. Not cheap but a great night out.

Pallet Dining is more formal down stairs, upstairs is a cool burger joint. It's owned by female Sydney Chef from Bondi. Excellent food!
