I prefer this Elephant sanctuary trip. I think they take care of elephant very well and don't make it too "touristy". This is the address to their office which is in the old city. They organize a a trip which includes 1.5 hours van to the sanctuary. Very relax time where you can even take a bath with these massive creatures.

An Ethical Elephant Experience Elephants are considered cattle under Thai law and are often mistreated, many of the Elephant based activities in Chiang Mai advertised may not be considered ethical
